Living la vida gluten-free in San Antonio, Texas:)

It used to be that having Celiac disease was something that you really had to explain to people.  I used to hear all the time, "what does gluten-free mean?"  These days I hear more stories about people just being diagnosed with gluten problems, kids being diagnosed with Autism or people going gluten-free just because they feel better.  What is going on?  Is there something in the water?


I am a professionally trained chef and pastry chef.  I graduated from Johnson & Wales University and have worked in the industry seemingly forever as my Mom was a caterer growing up.  I was diagnosed with Celiac Disease in 2003 just as I had taken a job running a retail/wholesale bakery for  twin German Master Pastry Chefs.  Imagine not being able to taste all those amazing goodies!

Fast forward a few years later.  I was eating a sandwich on some cardboard-like gluten-free sandwich bread that cost an arm and a leg, and my husband said, "With your training, can't you do better?"  And so the gluten-free baking journey started.  There was some good, and some bad, and some really bad.  And now, it's not just good, it's great!
